Made it back pretty much unscathed. Bike hummed like a sewing machine. Some initial impressions: She certainly is no power house, no surprise, I got the impression that much time spent above 45 would be wringing the life out of her. Spent most of the ride at 35 to 45 mph with a couple brief 50 mph spurts. Felt a little soft, squirrelly, like low tires. Checked and they were 20 front 25 rear. Put them up to manual specs but see some like to run them low:unsure:. I'm 5'8" 160lbs 30" inseam and don't see how anyone much bigger could possibly be comfortable on the bike. I found myself sitting on the front of the rack? And finally where the devil is the next gear? Found myself reaching for that elusive 5th gear never to be found;)
Took .984 gallons for 81 miles. They said it was full but the first bar dropped off in 5 miles so I'm sure it really got better than 82 mpg.

Glad you made it home safe. If the dealer sent you off with underinflated tires it would be a good idea to check the chain tension and oil level in case they missed those as well.
For tire pressure you're best off running the recommended PSI on the street with the stock tires, you can always air them down off-road if you notice tire slipping. The OEM front tire does wash out easily offroad though, airing it down doesn't fix that, but different tires with more bite can. Some taller folks have found adjusting the handlebars to help with ergonomics. I found that MPG improved a little bit once the bike had some miles on it.

Changed the oil. I know @ 81 miles you don't need to do that with modern engines and oils........my investment and I don't mind spending a little money to take care of it. I don't change out rigs every couple years. Put the right pressure in the tires and went for a ride around town, over 142 mpg😲 Can that be right?

Sounds high, but could be close if you were really riding slow and on flat terrain. Something to consider is that a single data point isn't very reliable for calculating MPG. You want to average a few of them.
Fuel pumps aren't always accurate at measuring fuel dispensed, they're allowed a margin of error, especially when an amount can sit in the hose that would be insignificant for filling up a 20gal tank, but significant for a 1.4gal tank. Your mileage on the odometer will also read higher than actual miles traveled if measured by GPS. I've found that the CT125 odometer is ~5% off with stock tires, and even that could vary with load and tire wear.

I'm sure you are right but the 81 on the initial drive home was a bit disappointing :( Yes it was flat ground easy pace, riding mostly 35 to 45 MPH. At least I know its going to get substantially better than 81.

Also be mindful that the winter and summer blends of fuel vary slightly so you'll see different efficiency over time. My first tank was low on fuel efficiency as well.

My lowest ever was in the mid-90s which was near-WOT for the entire tank, but if you look into my sig you'll see a fuel dashboard that shows MPG over time which is typically city riding. There are a lot of things I can't control, but I was intentionally running the oil longer than I normally would to see what would happen to fuel efficiency over time. We're definitely on the winter blend now as well as winter traffic patterns, so I'm sitting in traffic a lot more than I wish I was. I'm running up near the GVWR of the vehicle, and it's very hilly where I live.

My first bar drops off at around 20-25 miles when the bike is full, so based on that your first tank is likely to be an actual 102 mpg tank, which is almost spot on for what my first tank was (I got 101 mpg).
